Ayoub - Anonimo Vineyard, Pinot Noir
The Ayoub Vineyard and Winery were born out of Mo Ayoub’s passion for food and wine. Among the most prized sites in Oregon’s famed Dundee Hills, Mo’s four-acre Estate vineyard was planted in 2001 and is farmed by hand using organic methods. The steep-sloped, east-facing site, with it’s red clay volcanic Jory soil and densely planted vines, is ideal for producing high quality Pinot Noir. Varietals: 100% Pinot Noir Fermentation: 10% whole cluster PH: 3.65 Alcohol: 12.9% Filtered/Unfined Ageing: 11 months in 25% new French oak with medium/+ toast Production: 3800 bottles - Tasting Notes: Captivating nose with a medley of spices, black cherry and savory notes. Harmonious on the palate with refined tannins that envelopes a core of spiced dark red fruit and orange peel accented with minerals.
