Produced in Quinta de Santa Teresa, with grapes from the P67 parcel, this Monólogo is made from Avesso, the typical variety of Baião. Winemaking Process: The must ferments in stainless steel vats at low temperature. Stabilization & gentle filtration take place. No animal derivative is used in the process, making it a vegan-friendly wine. Special care was taken in this process, minimizing any impact, with the intention of producing a wine that expresses the particularities of the grapes & the terroir only. Tasting Notes: This wine shows a fresh aromatic profile, with notes of white flowers, thyme & a citric side to it. On the palate smooth & silky notes of guava, pear & passion fruit, along with a well-adjusted acidity. It will age very well in bottle. Food Pairings: Perfect with fresh flavours such as Greek salad, white fish with lemon & garlic prawns. Serving Temperature: 8-10°C
