This Cava uses the best white grape selection in Requena. After soft pressing they keep just a fraction of the must to achieve a delicate unique balance. First fermentation & second fermentation (in bottle), at 16ºC to widen the range of flavours. Fruity & floral, typically characteristic of Valencian Cavas. Sparkling white wine, dry, organic. Straw yellow Cava with greenish tones to the rim. Lively, fine & persistent bubbles. Fresh & zingy with aromas of white fruits & citrus notes with buttery elegant pastry background. On the palate it is round & easy. Great with rice dishes, seafood & pasta. But also perfect as an aperitif or served with hors d'oeuvres.

The Neleman wines reflect the aromas & flavours of Casa Corones, in the Alforins Valley. Here the soil is white limestone & its surprising bright white surface gives its name to the entire region: Vall d’Albaida (The White One). Rain is absorbed like a sponge. When it dries up, the upper layers form a natural barrier, which restricts evaporation. This reserve of moisture contributes to the roots development. The Chardonnay has been picked at an advanced point of maturation & the Muscat in an early state in order to give a subtle touch of flowers, white fruits & peach in the nose & a wide mouthfeel. Pale in colour with golden reflections. Middle-high aromatic intensity, fresh & exciting, with a long fruity finish. Very well balanced. Drink this wine with raw & lightly cooked shellfish, grilled fish, fish pâtés, or vegetable terrines & pasta or risotto with spring vegetables.

The vineyards are situated in a hilly district that offers great conditions of rocky soils to grow Marselan variety (hybrid between Garnacha & Cabernet Sauvignon). Blending it with Garnacha to reinforce the bold fruity nature of the wine. Red wine, young, fruity, organic, vegan. Clean & bright with garnet reflections. In the nose clean violets & cherries, soft tannins in the mouth. Powerful taste & fruitiness are the best words to define this delicious wine. The vineyards are situated in a hilly district set in a mountainous region, cut up by ravines more than 100m deep. Both varieties are produced in a rarely fresh area in the Valencia region, 700m above sea level. Harvesting is done at night, avoiding oxidation & the high temperatures of the day. Once in the winery, the must is cooled to 10°C (sweet maceration). After 3 days, fermentation takes place, controlling the temperature at around 21°C. Brilliant crimson with ruby hues in colour. Aromatics of bright red fruits, floral with a fleshy, soft & silky palate. Displaying good natural acidity, which promotes food pairing opportunities, making this wine ideal for food lovers everywhere. Red wine, young, fruity, organic, vegan. Serve slightly chilled with black pepper steak, lamb koftas, spicy curries & of course pepperoni pizza.

Marselan is a varietal that is a cross between Cabernet Sauvignon & garnacha. We are growing it very happily because we find it unites the Mediterranean character of Garnacha & the elegance of Cabernet. The wine is made from low yielding vines in small fermentation tanks, then aged in new French oak for over 14 months. Bottled without fining or cold stabilization to keep the wine as pure as possible. Strong, fruity, organic & vegan red! What’s not to love! We believe it is a powerful, tasty & balanced wine that can match fine foods or be enjoyed as a welcoming drink.... Try this wine with good spicy vegetarian food.

The wine is composed mainly by Verdil, an indigenous Alforins variety. After being blended with Chardonnay, Sauvignon Blanc & Viognier, the grapes are placed in a cold store for 15 days at 5ºC. It is partially fermented in new French Oak thus adding extra aromas (toasted, spices) & a velvety after taste. White wine, strong & fruity, organic, vegan. This wine is made with very ripe but shaded grapes in order to achieve a sexy mouth filling taste but keeping freshness & acidity. It is a white that surprises for its complexity & balance. Yummy with risotto, great with goats cheese & perfect with friends.

The grapes are taken from 4 plots in Rorschwihr on dark chalky soils on heavy loess rock. Deep sandy-clayey soils. 3 plots in Orschwiller on dark washed-calcareous soils with 15-20% granitic stones. Silt sandy-clayey subsoil Tasting notes: Intense & fresh nose. Fine bubbles with elegant citrus fruits notes of lemon & grapefruit. Nuances of bread yeasts & smoky notes. A fresh attack & structured acidity. Refreshing & fruity, with a creamy touch. Nuances of brioche & hot bread. Beautiful maturity. Winemaking Process: The wine is made with 100% Pinot Noir grapes grown in Silberberg, a single plot in Rorschwihr, known for its deep clayey soils with marl and limestone. The vineyard is situated at an altitude of 350m, with an East and South East exposition and gentle slope. The vineyard is cultivated using organic farming practices, certified by ECOCERT. Tasting Notes: The wine has a pale white color with pink nuances, and a brilliant, continuous, and fine effervescence. The nose is intense and fresh, with promising Pinot Noir aromas, very fruity on morello cherries and raspberries. There are also nuances of bread yeasts and smoky notes. The mouth has a fresh attack, and the wine is bodied with fresh acidity, elegant bubbles, and an onctuous and creamy touch. The grapes used to make the wine are very ripe, resulting in a long aftertaste on bodied acidity. Food Pairings: This structured wine is suitable for both aperitifs and desserts. It can also pair well with white meat dishes like poultry in sauce, pigeon in brown sauce, as well as seafood made in a Crémant sauce such as mussels or warm oysters. Serving Temperature: It is recommended to serve this wine at a temperature of 8-9°C and it can age for 5-6 years.

Winemaking Process: The Pinot Gris grapes were hand-harvested from 3 plots located in Bergheim, North of Colmar. The vineyard was managed according to the mode of Organic Agriculture, controlled by Ecocert. The grapes were direct pneumatic pressed with the whole bunch, cold settled, and fermented using natural yeast at cool temperatures. The wine was aged on lees for 6 to 8 months, underwent late clarification, and very fine filtration before bottling. Tasting Notes: This Pinot Gris has a beautiful gold-yellow colour with amber reflections. On the nose, it has an open and young aroma with a smoky and peppery characteristic, followed by exotic fruits, vanilla, liquorice, and caramel. On the palate, there is a light carbonic perception due to its youth, and is a heady, heavy, and fleshy wine with an intensive vanilla, liquorice, and ripe fruit bouquet. It is powerful and round, making for a luxurious drinking experience. Food Pairings: This wine is suitable as an aperitif, with white meat dishes like poultry in mushroom sauce. It can also pair well with dessert, making it a very gastronomic wine. Serving Temperature: 10°C

Winemaking Process: The Roussanne, Marsanne, and Viognier grapes used in this wine were carefully selected from growers working in organic viticulture methods, which means no use of chemical fertilizers, herbicides, or pesticides. The grapes were grown in the area of Aspiran, Hérault, which is dominated by stones with a certain depth and the presence of limestones. The winemaking process included skin contact for two weeks, direct pressing followed by low-temperature fermentation, and three months aging on fine lees in a stainless steel tank. The wine was then bottled with SO2 < 50mg/L. Tasting Notes: The wine has a pale gold color with a hint of orange. On the nose, it displays aromas of apples and pears with a hint of orange. The wine also has a floral note of orange blossom, along with pear and apple notes. The palate is complex, with hints of peach and lychees and a subtle green tea-like tannin structure. The wine has a nice acidity and a long finish. Food Pairings: This wine would pair well with meat or fish dishes with sauces. Its nice acidity also makes it suitable for pairing with salty notes or fresh cheeses.

This is the first creation of François. Merlot is a widely planted varietal in Languedoc & sometimes abused by winemakers as a ‘blending grape’, so François wanted to restore its fame & reputation. To do that you have to go “Little by little…” Harvested at optimum times for a lighter alcohol profile & stronger acidity. By using patience & expertise, François produces a wine with smooth tannins & medium alcohol, balanced with a good acidity. Winemaking is an art… Little by little! Tasting Notes: Being a Merlot from the South, expect complex black & red fruits to perfume your glass with a hint of black pepper. The palate is full-bodied & indulgent with juicy freshness & soft tannins. Exploding with red pepper, red fruits & flaming chorizo. Serving Temperature: 14-16°C Food Pairing: Grilled meats, duck, spicy dishes or vegetables with paprika sauces & cold cuts (charcuteries). Feel a bit too hot? Pop it in the fridge for 20 mins & you will feel like you’re having a basket of fresh fruit!

Winemaking Process: This Grenache wine is made from carefully selected organic grapes from three different regions in Languedoc: Aspiran (Grenache Blanc), Saint-Aunès (Grenache Noir), and Aigues-Mortes (Grenache Gris). Tasting Notes: ‘3G’ has a light ruby (or deep pink) colour and an intense nose of red and black fruits. On the palate, the wine is expressive, with a focus on lightness and gourmandise. It boasts intense aromas of fruit, including strawberry, raspberry, peach, and more. The freshness of the Grenache Blanc is carried by the complex aromatics of the Grenache Gris. The few tannins of the Grenache Noir, gently add to the wine's body. Food Pairings: This wine pairs well with a variety of foods. It is a great aperitif wine and pairs well with grilled fish and meat, spicy dishes or dishes with sauces, and cold cuts.

Looking for balance between spice & fruit? La Mére Famille K is definitely that! With clay/limestone soil types, 50+ year old organic vines & concrete tank fermentation, you really are just tasting the land here. La Famille K are also sustainable farming certified, using manual harvest techniques, in the traditional vinification style of Beaujolais. This wine has half-carbonic maceration of 10 days in concrete. La Mére is then aged for 8 to 12 months in the same concrete tank. Serving Temperature: 13-14°C Tasting notes: Loads of red fruits & a backbone of cedar-wood spice, creating a delicious wine with lots to talk about around the table! Low intervention & a taste of the terroir!

A refreshing twist for Pinot Gris & Chardonnay lovers alike! Combining the weight & fatness of Chardonnay, with the aromatic minerailty that is French Pinot Gris! Plus it’s also organic, sustainably made, vegan & low in sulphites! Using whole grapes, fermentation in epoxy lined cement vats & finally light filtering. Locking in freshness & retaining more aromatics! Serving Temperature: 8-12°C Tasting notes: With notes of melon, quince & a slight ripened banana on the nose. Developing into apple, citrus & a stony minerality from the Pinot Grip & a weightier element from the Chardonany. Food Pairing: Ideal with tuna rillettes, hummus, Asian, seafood or as an aperitif.

Dark & crimson beautiful red colour with very slight elements of ageing shown by the lighter rim to the wine when in the glass. Dense & intense wine with dominant red cherry, blackberry & some cinnamon on the finish. Serving temperature: 16 °C A weightier Cabernet than most are used to, yet with a relatively low alcohol content of 13.5%. This results in soft, elegant tannins, & a well rounded wine. Topped off with a beautiful length, this wine is a strong contender for our favourite. Fermented on the lees, non-filtered with possible natural sediment in the bottle, this wine will only improve with age!

The Pinot Gris & the Traminac have had a separate fermentation process in stainless steel tanks where the peels are fermented with the amber colour of the wine. Afterwards the blend is made in large wooden barrels of Slavonian oak. The wine is then aged in these barrels for ten months. Tasting Notes: Starting with intense notes of apricot & spice. The wine is full-bodied but also has a softness, thanks to the ageing in oak barrels. The skin of the grapes is also with the juice, giving the wine pleasant soft tannins. Serving Temperature: 10-12°C Pairing Suggestions: Pairs well with turkey dishes, smoked cheeses, bacon in a creamy sauce, garlic shrimp & many spicy Asian dishes.

The wine to hit your Bolfan G spot! One of Croatia’s most popular white grapes, among the indigenous varieties of Croatia. The Graševina grape, known as Welschriesling in Austria, ripens late to produce wonderful acidity in its gently aromatic wines. Graševina wine is straw yellow & limpid in clarity, very pronounced aromas of coriander, fresh petals, & lemon sherbet. Dry, yet with prominent freshness & long in length with a harmoniously balanced acidity. A wine with strong “personality”, elegant, dynamic, with expressed citric warm fruitiness. A distinctly different wine with an easy drinking nature, perfect for a first exploration of Croatian varietals! Pairing Suggestions: Versatile due to the strong character, but is fantastic with pork chops, grilled pork loin, sushi, fish carpaccios or hard cheeses.

Winemaking: Souvignier gris is a fungus-resistant white variety newly bred in 1983. Souvignier gris was crossed by Norbert Becker at the Freiburg State Viticulture Institute. It all started as a cross between Cabernet Sauvignon X Bronner. It has a pale rose skin colour. Tasting Notes: A light bright white wine with intense aroma of stone fruit, passion fruit and pines. Refreshing and easy drink with great character. Think of cross between Traminer/Pinot gris. Light and lively ! Food Pairings: Matches well with smoked fish like trout or salmon with cucumber and cream cheeses, fresh vegetable salads. Sushi and sashimi as well as grilled fish and seafood. History & tradition define this wine made exclusively from organic Monastrell grapes, which is the indigenous variety of the region. From their oldest vines at 45 years. Which with no irrigation & large temperature changes putting stress on the vines, create a roundness beyond its years. When every bunch of grapes reaches its optimum stage of ripeness, the grapes pass through a very soft de-stemming and crushing process. The temperature is maintained at 22°C during the first days of fermentation in stainless steel tanks & afterwards it is increased to 28°C until fermentation is finished. The lower temperature preserves flavours of fresh fruits, while the following higher temperatures helps to maximize intensity of the colour & extraction of ripened tannins. Tasting Notes: Ruby red with blue overtones. Aromas of ripe fruits, plums, cherries, mineral notes with a spicy, vanilla background. The fusion of old Monastrell vines from the side of the Cabezo de la Sal mountain, producing very few grapes, combined with the fresh fruit character of Tempranillo & the concentration of Merlot. Coming together to make a full bodied yet balanced wine. Throughout the cold winter, the wine rests in concrete tanks that are almost a century old, where they take shape & mature. 4 months in new French oak barrels give it toasted cocoa quality. A complex, elegant wine in memory of the winemakers from whom they inherited the passion for their land. Tasting notes: Dark cherry base with a deep red finish. Subtle aromatic herbs, fennel & eucalyptus, with bold ripe red fruit. Full bodied, with fine silky tannins. Moving to a creamy toasted, balsamic finish. This wine is the result of old Airén vines, a Spanish indigenous grape variety, cultivated in the traditional way in non-irrigated vineyards, and Sauvignon Blanc, of which yields were controlled (less than 0,50 kg/vine) to obtain maximum concentration & aromatic complexity. All attention was dedicated to respecting the natural environment and terroir, using organic agriculture & hand picking during the cooler hours in the morning in order to preserve the grapes´ integrity, but also to limit the risks of oxidation. The Royal Oporto Extra Dry White is an alternative style of Port: the brandy is only added at the end of the fermentation process, when there are no sugars left. We suggest to be served on the rocks with an orange twist or as a Port Tonic. Fermentation takes place in stainless steel vats at controlled temperature in contact with the skins until the addition of the brandy. The wine then ages in oak vats for a period of 18 months. The Royal Oporto 10 Years Old Tawny is a blend of Ports from several years, which have been selected to age in oak casks & “balseiros” that, through the ageing, develop the character & the organoleptic characteristics corresponding to the ten years pattern established by the Port & Douro Wine Institute. In this Port category, the experience & inspiration of the master blender is required to foresee the present & future development of the Ports. Tasting Notes: A tawny colour with shades of gold, showing off a magnificent bouquet of dry fruits & spice within a harmonious, mellow structure. Favaios 10 Years only uses the best Moscatel grapes from the best harvest years. Fermentation lasts about three days with intense skin maceration & temperature controlled at 15-16 ºC. The wine spirits are then added to the grapes & must, interrupting fermentation so as to obtain a wine with high alcohol content & residual sugar. The maceration with the spirits continues for another 5-6 days at low temperature. After pressing, the wine begins a process of ageing in wooden vats for several years. The balance of the spirits with the wine starts & enhances its bouquet. During ageing the wines are chosen for the blend, mixing older harvests with younger years, making the wine richer, more intense & complex.
