Adega Mayor surprises the plains of Alentejo with its imposing minimalist white building, the first winery designed by a renowned architect in Portugal. The entire production processes happen here: grape processing, wine making and storage. Its proximity to the São Mamede Mountain, the granitic soils and temperate climate contribute to the unique character of its wines. From respect for nature, the Bio Selection line is born, wines 100% organic from Adega Mayor. Fruit from organic vines, and with minimal human intervention, the new BIO Selection line is a commitment to future generations. WINEMAKING: After manual harvest and a careful selection of clusters, the destemmed grapes were distributed by two types of fermenters: one part fermented in stainless steel vats and the other in clay pots. The fermentation of this wine was as natural as possible, following a strategy of minimal intervention and without adding any oenological products. TASTING NOTES: Pale yellow wine, clear and brilliant in appearance. Pure and complex on the nose, hinting at notes of white-flesh fruit, quince, Reinette apple and orange zest, enveloped in mineral notes of resin and wet clay. The palate is original and follows the aroma profile, combining ripe fruits, mushroom, dried moss and an engaging acidity that brings this wine to a punchy finish. CONSUMPTION: 2022 - 2024 GASTRONOMY: It goes with exotic, flavour-packed dishes. Recipes that use spices such as saffron, rosemary or curry can be good choices.

WINEMAKING: After manual harvesting and a careful bunch selection, the grapes were destemmed and gently pressed. The resulting mash was clarified at low temperature and fermented naturally (native/indigenous yeasts) in stainless steel tanks. The production of this wine was as natural as possible, following a strategy of minimal intervention and without any addition of oenological products. TASTING NOTES: Intense pink wine with a "raspberry" hue. It exudes a pure aroma, expressive and typical of the grape variety, suggesting ripe red fruit, plum, pomegranate and wild berries in syrup or jam. The taste reflects the profile of its aroma, it is lively, full of juicy fruit and frank flavours that culminate in a finish of pleasant depth. CONSUMPTION: 2023-2025 GASTRONOMY: A genuine rosé wine, from the Portuguese Alentejo, firm and vigorous, that appreciates company at the table. Grilled fish dishes, lightly seasoned white meats, pasta, or vegetarian risottos go perfectly with this wine.

WINEMAKING: After being picked by hand and carefully selected, the destemmed grapes are fermented at a controlled temperature of some 18ºC in stainless steel vats. The fermentation process of this wine was as natural as possible, following a strategy of minimal intervention and without adding any oenological products. TASTING NOTES: A medium-intensity ruby-violet wine. It has a pure and exuberant nose, brimming with expressive aromas of fruit and some fresh vegetables, hinting at notes of gooseberry, black cherry, raspberry, gum rockrose and wildflowers. The palate has a polished acidity, body and tannins, the authentic expression of the fruits permeates the palate all throughout, revealing a frank and simple wine with allure. CONSUMPTION: 2022 - 2025 GASTRONOMY: A fresh and versatile red wine from Alentejo that goes well with a wide variety of dishes. Grain curry, meatballs of lentils, light meals, snacks, cheese and sausage boards, or even barbecue meats are sure to be excellent choices.
