2022 Briar Ridge, Single Vineyard Dairy Hill Semillon

Featured in Matthew Jukes 100 Best Australian Wines , while also receiving a score of 97/100 from the Halliday Wine Companion. Briar Ridge's Single Vineyard wines are produced in very limited quantities from their unique 'Dairy Hill' vineyard block, only when vintage conditions have yielded the highest standard of fruit quality. This vintage displays pure Semillon fruit aromas of Kaffir lime leaf and lemongrass, a crisp refreshing palate of citrus fruits and subtle savoury thyme with a mouthcoating texture. Handpicked and sorted fruit was whole bunch pressed to a stainless steel tank. Cold settled for 12 hours before racking to a large format neutral oak cask for fermentation. Fermented at 18 degrees Celsius for 12 days with ambient yeasts and left on full yeast lees for 4 months before being stabilised and lightly filtered. No finings. The Dairy Hill Semillon is grown on well-drained sandy loam soils located in the Mount View region of the Hunter Valley. The vineyard has drop irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour. Excellent drinking whilst young, this wine will develop in bottle in the medium to long term with careful cellaring. ABV: 11.8%, pH: 3.16, TA: 6.7g/L

2021 Briar Ridge, Single Vineyard Dairy Hill Shiraz

Our Single Vineyard wine is produced in very limited quantities from our unique 'Dairy Hill' vineyard block, only when vintage conditions have yielded the highest standard of quality fruit. This wine reveals a lovely intense red fruit palate complemented by savoury and spice characters in classic Hunter Valley style. Matured in the finest French oak puncheons, this wine displays a well-structured and elegant finish with great length. The grapes were handpicked and destemmed through the chiller into tank at 12degC. After three days of cold soaking to enhance the colour and fruit characters, the must was inoculated using a specific yeast strain. Fermented for 10 days, the wine was then pressed off skins to French oak puncheons with approximately 20% new wood. The resulting wine went through malolactic fermentation and matured in barrel for 15 months. The resulting blend was assembled in tank before being fined and filtered into bottle. Our Dairy Hill Shiraz block is eastern facing, well-drained sandy loam soils located in the heart of Hunter Valley wine country NSW. The vineyard has drip irrigation installed on each vine row to ensure vine health and consistency of quality. The crop yields are relatively low, producing excellent concentration of fruit flavour. Reward yourself with careful cellaring for up to ten years.

2020 Bobar Cabaret

This tiny parcel of Cabernet Sauvignon was planted in the late 1980’s, fifty metres to the south of the Bobar Chardonnay vines. Facing east and tucked hard into the base of the Christmas Hills, it is protected and hidden with a fertile ‘garden of Eden’ energy. The wines from these mature vines have an ease, balance and poise, possessing depth and intensity without weight or undue effort. The freshly harvested and uncrushed bunches of Cabernet Sauvignon were placed directly into small open fermenters for 3 weeks carbonic maceration. After pressing the ferments were allowed to finish in old oak casks before maturation during winter and spring. It was racked and bottled without the addition of sulphur dioxide in December 2021. Alcohol – 11.5% Titratable acidity – 6.1g/L pH – 3.50 Total sulphur dioxide – 32mg/L Residual sugar – 0.11g/L Volatile acidity – 0.68g/L The 2019/20 season varied a lot, a real mixed bag. A wet winter and cool sunny spring was followed by a warm and dry start to summer, conditions that that promoted fabulous healthy vine growth but unfortunately low yields. Mild sunny days leading up to harvest kept the vines fresh and vital, the cool and complex season reflected in its pure, crisp and complex wines.

2022 Bobar Yarra Valley 85% Pinot Noir

A blend of 85% Yarra Valley Pinot Noir from the silt loam soils of Nenagh Park and 15% Syrah grown on the gravel loams of the nearby Highbow Hill. The development of power and richness with great restraint results from the vast easterly aspects of these two sites and their protection from the north and west. Wines from these spectacular vineyards are flavoursome and poised. Both the Pinot Noir and Syrah components were made with 100% whole bunches but a nuanced approach to the macerations built layers and textures in the wine. The Pinot Noir received two treatments. The first parcel was carbonic macerated, leaving the bunches whole with no crushing. Greater structural and savoury elements were built into the wine in the second Pinot Noir parcel with gradual crushing of the grapes by hand throughout the maceration. The Syrah vineyard’s natural elegance, balance and restraint was allowed to come to the fore with a very hands-off whole bunch maceration. Alcohol – 13% Titratable acidity – 5.6g/L pH – 3.55 Total sulphur dioxide – 6mg/L Residual sugar – 0.06g/L Volatile acidity – 0.38g/L The wines of 2022 are outstanding, resulting from the third successive cool season. Wet soils in spring but warm sunny conditions later in spring produced crops that varied between very light to moderate depending on the site. The generally cool conditions made for a slow and steady vine development, slow ripening with fantastic natural acidity and amazing flavour development. The wines of 2022 have purity, balance and intensity with profound ageing capacity.

2021 Sabreseno, Vermentino di Gallura D.O.C.G Superiore

The island of Sardinia is known for its dramatic windswept coastline with rugged and beautiful cliffs that plunge into the pristine Mediterranean waters. The people are also dramatic and windswept but they harbour a long tradition of crafting some of the world's finest Vermentino. This 100% Vermentino from Sabreseno is a testament to this tradition. The word Argeste comes from the tempramental Mistral wind that blows onto the northern coast of the island and gives this wine a refreshing mineralic finish that reminds you of a crisp sea breeze. With beautiful citrus notes, this wine is to be enjoyed whenever one hears the call of Neptune (or any other time for that matter). ABV: 14%

2020 Grove Estate, Hilltops Shiraz

A star studded wine having been featured in Matthew Jukes's 100 Best Australian Wines and also the winner of the No.1 Shiraz from NSW in 2020 by the Real Review as well as their award for Top Value Wine. As stated by Matthew himself: "Had I tasted this wine blind, I might foolishly have tried to convince myself it was a keen-edged Mencía or a brittle Teroldego, such is the energy and vivacity of the fruit found here. Of course, it’s a Shiraz, but the Hilltops setting has given this red so much purity and lift it is remarkable. Pristinely clean, blindingly bright and fabulously controlled, the slender black fruit is augmented by enticing coffee bean detail, and without any trace of over-worked muscle or unsightly fat, the sleek lines and devastating purity make this a wine that is far too easy to enjoy and also impossible to forget."

2013 Grove Estate, Kingsvale Shiraz

This 2013 vintage was extremely dry and so only a small vintage was produced. It is a rich, full-bodied shiraz, more like a Barossa shiraz then a typical Hilltops style yet it retains its freshness, with delicious, sweet fruity flavour. Oak and fruit tannins gives structure and dry out the finish.
