Vermell is a pink mutation of Xarel-lo that is becoming more and more popular. It is not permitted in the production of Cava, however it can be made under the Corpinnat label. Here, it comes from a single terroir, Mosset, and is aged for 18 months on lees. Very subtle pink colour, obtained through light skin maceration. The nose is slightly herbaceous, with aromas of rocket and rosehip, and a hint of cucumber. Very fresh and scented on the palate, and very creamy. Quite dry and textured, with just a hint of tannin from the skins and a lovely wild strawberry flavour.
